Turn One Meal Into Two Meals

If you are busy or on a tight budget then you must read this hub. I am going to explain a really quick method of turning one meal into two or maybe even three meals. This particular hub is going to use pork chops but you can substitute pork for chicken or steak. I am also going to stick to talking about methods as opposed to lengthy recipes.

For the first meal, you will want to double the amount of meat that you would normally cook for that night. In this example, I will use pork chops. If you need to make 4 pork chops for your family then cook 6 or 8. Make that meal with whatever side dishes or veggies that you would normally plan. When the pork chops are done cooking, put half of them to the side to save for the next day. I prefer to place them in a baggie and into the refrigerator.

On day two, you can easily turn those pork chops into a new meal with some cooked spaghetti and some veggies. In this example, I cut up an onion, some mushrooms and used some frozen peas. While the pasta was cooking in boiling water, I heated up a skillet or large pan with enough olive oil to coat the surface. Once the pan was very hot, I dropped a scrambled egg into the oil and scrambled it up. Don't worry if the scrambled egg looks oily. The rest of the ingredients will soak up the rest of the oil. After the egg is scrambled, toss in the onion and keep the pan at medium to high heal to let the onion become translucent and soft. After that is done cooking, throw in the mushrooms and it all cook together for a few minutes. When the mushrooms are to your taste, toss in the pork. You will have to slice the chops into thin slices for the stir fry. Incorporate the ingredients, reduce the heat, and add a few palmfuls of the frozen peas. At the end you can season with salt and pepper or a little bit of dark soy sauce if you prefer. When the pasta is finished, drain it off and then drop it into the skillet with the remaining ingredients for a really delicious stir fry.

I turn this stir fry into a third meal by also making more pasta and adding a few more veggies than I would normally eat. The leftover can be eaten the next day for a nice delicious lunch.

Feel free to substitute the pork for chicken or steak. You will find this method to be a huge time saver and is also a great way to stretch your food dollars. Most of the ingredients in this meal are fairly inexpensive.

Terry, I love this idea! My fav is to just cook up a bunch of chicken in the crock pot with a light sauce and then I've got cut up chicken in the fridge for the week to stir fry, put over a salad, add to a sandwich or pasta dish...the ideas are limitless! Thanks for sharing this. =)
